During this Covid pandemic my mom & I have been talking and cooking lots. She shared with me this chipotle beef chili recipe that she found the other day and it’s hearty. It uses beef stewing chunks instead of ground beef. Best of all it’s cooked in a crockpot.
To the crockpot add salsa, beef broth, chili powder, chipotle pepper, cumin, garlic, onion, beef stewing chunks, & kidney beans.
Once all ingredients added, stir it up. Cover and cook on low for 8-9 hrs or if you’re really hungry, cook on high for 4-5 hrs until beef chunks are fork tender.
Next, grab you a ladle, bowl, and dish up. Add a dollop of sour cream & shredded cheddar cheese. Guess what, it’s eatin time!!!

Chipotle Beef Chili Ingredients:
-1 jar (16 ounce) of salsa
-1 cup of beef broth
-2 tablespoons of chili powder
-1 tablespoon of cumin
-1 teaspoons of ground chipotle chili pepper
-4 garlic cloves minced
-1 large onion diced
-2lbs of beef stew chunks
-1 can of kidney beans, rinsed & drained
