Raising buffalo on the prairies is becoming more popular and there appears to be an appetite for the product.
Canadian Prairie Bison, a Canwood-based organization made up of 150 producers from across Western Canada, will soon have its bison burgers on grocery store shelves.
“We went to a meeting last year with Sobeys and proposed a bison burger to them,” said Roger Provoncher, marketing manager for Canadian Prairie Bison. “This year they’re going to give it a trial.”
The burgers will be appearing this week at Safeway and Sobeys in four cities in the province: Saskatoon, Regina, North Battleford and Prince Albert.
While retail is something new to Canadian Prairie Bison, which has worked mainly on the wholesale side, the company has been making the burgers for a while — even having them featured at the 2010 Vancouver Olympics.
“We sent out 22,000 burgers for that,” Provoncher told paNOW.
Provoncher explained that the company started operations in 2001 with a group of producers and by 2005 it became CPB.
The buffalo are raised all over Western Canada. They are then transported to Carman, Man., for processing. The burgers themselves are made in Winnipeg.
